We’ve had readers, friends and co-workers reach out in recent weeks about the status of Beef-a-Roo, the fast casual restaurant chain based out of Rockford, Illinois, that opened in Little Rock last October at 1315 S. Shackleford Road.
The Little Rock store has been closed following a small fire in January that destroyed its griddle and a fryer, Beef-a-Roo CEO Matt Riddle said in an email on Monday. The damage was minimal, Riddle said, but equipment availability and insurance have slowed down reopening plans. Riddle said the restaurant should be back open and operational following Easter Sunday, but the date has not been finalized. We’ll update you when the new date is announced.
Beef-a-Roo, “famously delicious since 1967,” its website says, offers a variety of burgers, roast beef and chicken sandwiches, salads, wraps and baked potatoes. Beef-a-Roo’s only other Arkansas location opened in Harrison last summer.
